Researchers at the Indian Institute of Technology (IIT), Delhi have created, what they say, is an eggless vegan alternative for eggs. The vegan egg would be on display at Industry Day 2019 at IIT Delhi, which will begin on Saturday.
The plant-based egg is made from moong to match the level of proteins available in an egg. Kavya Dashora, assistant professor at Centre for Rural Development and Technology, IIT-Delhi with a group of researchers lead the entire project.
She highlights that “eggs have their own health problems – like cholesterol and allergies. Vegetarians who don’t get the protein found in egg can use this mung formula eggs. The most common thing for protein is pulses, so we started with research with pulses. Moong dal has the protein equivalent of egg whites”.
Dashora claims that the vegan eggs do not only taste similar when compared with a regular egg but also offer similar protein value, have zero cholesterol and are gluten-free.
The team further plans to introduce more plant-based meat products like sausages, beef, mutton, chicken, turkey. The aim is to control cruelty against animals and curb the possibility of getting sick due to animal-borne diseases.
